Add the cottage cheese and eggs to a blender or food processor. Blend until completely smooth.
Line a baking sheet with parchment paper and lightly spray it with oil.Pour the mixture onto the center of the pan and spread it into a thin rectangle or circle (about ¼ inch thick). Bake at 375°F (190°C) for 25–30 minutes
Let the flatbread cool for 5–10 minutes before removing it from the pan.
