Slice each date lengthwise and remove the pit if it’s still inside. Gently open the date without cutting all the way through.
Spoon about 1–2 teaspoons of peanut butter into the center of each date.
Sprinkle chopped peanuts over the peanut butter, pressing them slightly so they stick.
Melt the chocolate (with coconut oil if using) until smooth. Dip each stuffed date halfway or fully into the chocolate.
Place the dates on a parchment-lined baking sheet and freeze for 20–30 minutes, or until the chocolate is set.
