Creamy turkey and potato soup

Slow Cooker Italian Sausage, Potato, & Kale Soup (Gluten-Free)

Ingredients
  

  • 1 lb Italian Sausage I like to use Turkey.
  • 1 onion
  • 1 tbsp minced garlic
  • 4 cups chicken broth
  • 4-6 Russet potatoes
  • 1 cup half and half
  • 2 cups chopped kale
  • 1 tbsp corn starch
  • 2 tbsp water
  • salt to taste
  • pepper to taste

Instructions
 

  • Finely chop your onion and cook it with your Italian Sausage in a frying pan until your onion is soft and your sausage is browned.
  • Peel and chop your potatoes into small chunks.
  • Move the onion, Italian sausage, and poatotes to your crockpot. Add your chicken broth and minced garlic. Season with salt and pepper to taste. Stir well. Cook on high 3-4 hours or on low 6-8 (or just until your potatoes are soft).
  • 30 minutes before you would like to serve your soup, add in the half and half and kale. Whisk yor cornstarch together with the water and add the mixture in. Stir welll.
